Pad Thai (Thai Fried Noodles)

Pad Thai recipe (Thai Fried Noodles)
Ingredients
1/2 pack dried thin noodles ,3 - 5 Tbs. fish sauce ,3 Tbs. tamarind juice
3 - 5 Tbs. sugar, 5 - 8 Tbs. cooking oil ,5 - 8 fresh prawns ,2- 3 small onion (finely chopped ),
3 -5 Tbs. small dried shrimp , 2- 3 Tsp. ground dried red chillies, to desired hotness , 2 eggs
2 cups fresh bean sprouts ,1/2 cup garlic chives, cut into 1 inch ,1 lime cut into small wedges



Place a wok over high heat. Once hot, add cooking oil. Heat until it shimmers, then add the onion. until golden brown.


Add the eggs to the pan; once the eggs begin to set up, about 10 seconds


add the remaining ingredients in the following order and toss after each addition: noodles (maybe add some ofthe water) fish sauce, sugar , bean sprouts.

last one add garlic chives


Toss everything until heated through, but no longer than 1 to 2 minutes


Transfer to a serving dish. Serve immediately with the ground chillies and lime wedges
